The Sauce:
Step 1
Dice onions and peppers.
Step 1
In a sauce pan sauté the onions and peppers in a small amount of oil for a couple of minutes then add garlic and seasonings and stir in.
Step 3
Add in the tomatoes and tomato paste and stir in.
Step 4
Bring to a low boil then reduce and simmer for about half hour. Stir occasionally and break tomatoes up with a potato masher if there is big chunks.
Step 5
Remove from heat and set aside to let cool.
The Meat Filling:
Step 1
Brown ground beef in small batches in a skillet and set aside each batch in a cullender to drain fat.
Step 2
Break up the ground beef and return to skillet to cook a few minutes more.
Step 3
When done remove from the heat and set aside in a bowl to cool.
The Build……..
Step 1 - The Meat layer:
Put a thin layer of sauce on the bottom of the lasagna pan then place the first layer of noodles. Add more sauce then spread out the ground beef over top followed by mushrooms. Add the cheddar cheese and more sauce.
Step 2 - The Spinach and cheese layer:
Place the second layer of noodles and cover in sauce. Spread out the ricotta then spread out the spinach over top. If you want to add any other cheese like mozzarella, cottage cheese or parmesan add it here. Add more sauce.
Step 3 - The Topping
Place down the third layer of noodles and cover with sauce. Add the mozzarella and parmesan cheese.
Step 4 – The Bake……..
Bake covered in foil in a preheated 250 degree oven for 45 min to an hour. Take the cover off for the last 10 to 15 minutes.
Step 4 – The wait……..
Remove from oven and let cool for 15 minutes before serving
